How to Make SeaFoam Candy

Ingredients

  • 3 cups sugar
  • 1 cup chopped nuts
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon lemon extract
  • 2 egg whites
  • 1/2 cup golden syrup

Instructions

  1. Put the golden syrup, sugar, and water in a pan. Stir and heat until the mixture reaches 240°.
  2. Beat the egg whites until they are foamy. Add salt to the eggs.
  3. Pour the contents of the saucepan over the eggs. Stir until the mixture becomes stiff enough to hold its shape. Add the lemon extract and nuts.
  4. Pour the mixture into a greased pan. Cut into squares once it has cooled and become firm.

Notes

For safety, use pasteurized egg whites, such as Egg Beaters, for this recipe. Unpasteurized raw egg whites may contain salmonella.
