How to Make Molasses Coconut Squares
- 1 cup corn syrup
- 1 cup molasses
- 1 1/2 cups granulated sugar
- 1/2 cup water
- 5 cups shredded coconut
- 1 pound vanilla flavored fondant
- In a heavy saucepan, combine corn syrup, molasses, sugar and water. Cook over medium heat until mixture reaches 254 degrees F on a candy thermometer.
- Remove from heat. Add coconut and fondant; blend well.
- Pour mixture into a greased baking pan. Allow to cool. Dust with granulated sugar; cut into squares.
