How to Make Maple Puffs


  • 1 1/2 cups light corn syrup
  • 4 cups maple sugar
  • 1 cup water
  • 1/16 teaspoon of salt
  • 4 egg whites
  • 2 cups walnuts


  1. Combine corn syrup, maple sugar, water and salt in a heavy saucepan. Cook mixture until it reaches 260 degrees F on a candy thermometer over medium heat.
  2. Remove from heat and allow to stand 3-4 minutes. Slowly pour well-beaten egg whites into the mixture. Blend well until mixture thickens. Stir in walnuts. Drop by spoonfuls onto wax paper. Allow to cool before serving.
