How to Make Maple Puffs
Ingredients
- 1 1/2 cups light corn syrup
- 4 cups maple sugar
- 1 cup water
- 1/16 teaspoon of salt
- 4 egg whites
- 2 cups walnuts
Instructions
- Combine corn syrup, maple sugar, water and salt in a heavy saucepan. Cook mixture until it reaches 260 degrees F on a candy thermometer over medium heat.
- Remove from heat and allow to stand 3-4 minutes. Slowly pour well-beaten egg whites into the mixture. Blend well until mixture thickens. Stir in walnuts. Drop by spoonfuls onto wax paper. Allow to cool before serving.
