How to Make Lemon Drops

Ingredients

  • juice and rind (grated) from 1 lemon
  • 2 cups sugar
  • 1/2 cup water
  • candied lemon peel, chopped
  • 1 egg white

Instructions

  1. Add the water and sugar to a saucepan. Heat until the mixture reaches 240°.
  2. Add the lemon rind and juice, and the egg to the saucepan. Stir until the mixture thickens.
  3. Form small spoonfuls of the mixture into balls. Roll the balls in the candied lemon peel.
