How to Make Fig Cream Fudge
- 3 cups sugar
- 1 cup heavy cream
- 1/2 cup corn syrup
- 1/2 pounds of figs, finely chopped
- 1 tablespoon lemon juice
- Cook sugar, heavy cream and corn syrup over medium heat until mixture reaches 240 degrees F on a candy thermometer.
- Remove from heat. Add figs once the mixture thickens. Thoroughly blend in lemon juice.
- Spread mixture evenly in a greased pan. Allow to cool; then cut into squares.
