How to Make Butterscotch

Ingredients

  • 5 cups sugar
  • 2/3 cup corn syrup
  • 2 cups water
  • 1 cup butter
  • 1 teaspoon lemon extract

Instructions

  1. Mix sugar, corn syrup and water in a heavy saucepan over medium heat; bring to a boil.
  2. Reduce heat to low. Add butter; stir until melted. Increase heat to medium and cook until mixture reaches 300 degrees F on a candy thermometer.
  3. Remove from heat. Add lemon extract and blend well.
  4. Pour into a greased pan. When cool, cut into squares.
